Our house backs onto the state park. Why does the scratching in the attic start every fall?

It has nothing to do with how close you are to open space. Treating the exterior colony is what resolves it.
Do the canyon and hillside neighborhoods have different problems than the flats?
Yes. Slopes, retaining walls, and canyon drainages create harborage and hold moisture in ways flat ground does not, and homes in Carbon Canyon, Sleepy Hollow, and similar areas sit closer to open space and mature vegetation. They tend to see more spider and rodent activity, and more seasonal wildlife pressure generally.
